For the Grilled Texas Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

For the Avocado Lime Crema:

  • 1 ripe avocado
  • Juice of 1 lime
  • 3 garlic cloves
  • 1/2 white onion
  • 1 deseeded jalapeno
  • 1/4 cup sour cream or Greek yogurt
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste

For the Cilantro Slaw:

  • 2 cups shredded green cabbage
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, thinly sliced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, chili powder, smoked paprika, ground cumin, salt, and pepper. Mix well.
  3. Add the shrimp to the bowl and toss until evenly coated with the spice mixture. Let it marinate for about 15 minutes.

  6. In a large bowl, combine shredded green cabbage, chopped cilantro, sliced green onions, lime juice, olive oil, salt, and pepper. Toss until well coated.

Assemble the Tacos:

  1. Warm the corn tortillas on a griddle or in a dry skillet over medium heat.
  2. Spread a spoonful of the avocado lime crema onto each tortilla.
  3. Top with grilled Texas shrimp and a generous amount of cilantro slaw. Garnish with additional chopped cilantro and serve with lime wedges on the side.
